Cookies and Cream Cupcake
Oreo Cupcake:
* 1 stick unsalted butter, at room temperature
* 1 cup milk
* 2 tsp vanilla extract
* 2 1/4 cups flour
* 1 tsp baking powder
* 1/2 tsp salt
* 1 2/3 cup sugar
* 3 large egg whites, at room temperature
* 1 cup crumbled oreos
1. Cream the butter and sugar until fluffy.
2. Add the vanilla and egg whites one at a time, mix to combine.
3. In a separate bowl mix together the flour, baking powder, and salt.
4. Add the dry ingredients to butter mixture. Stir in the crumbled cookies.
Oreo Frosting:
* 8 oz package of cream cheese, room temperature
* 1/4 cup butter, room temperature
* 3-4 cup powdered sugar
* 1/2 tsp vanilla extract
* 3/4 cup crushed Oreos
1. Whip cream cheese and butter until light and fluffy.
2. Mix in powdered sugar one cup at a time. Add vanilla extract.
3. Gently stir in crushed oreos.
